1 can 15 oz Canned Chickpeas drained and rinsed

1 cup Orzo Pasta dry

2 cups Vegetable Broth low-sodium

1/2 cup Crushed Tomatoes

1 tbsp Olive Oil

2 cloves Garlic minced

1 tsp Crushed Red Pepper Flakes


Instructions

1. Drain and rinse the canned chickpeas thoroughly in a colander.

2. Sauté the minced garlic and crushed red pepper flakes in olive oil inside a deep skillet for one minute.

3. Add the dry orzo to the skillet and stir constantly for two minutes to toast the pasta ribbons.

4. Pour in the chickpeas, crushed tomatoes, and broth, then bring to a boil before simmering covered for 10-12 minutes.

Notes

Adjust the red pepper flakes to control the heat. If leftovers dry out in the fridge, add a splash of water or broth when reheating.
