Ingredients
3 lbs beef chuck roast
3 chipotle peppers in adobo sauce
4 cloves garlic
1/4 cup lime juice
2 tbsp apple cider vinegar
1 cup beef broth
1 tbsp cumin
1 tsp oregano
2 bay leaves
Salt and pepper to taste
Instructions
1. Cut the beef into large chunks and season with salt and spices.
2. Blend chipotle peppers, garlic, lime juice, vinegar, and broth until smooth.
3. Place beef in the slow cooker and pour the sauce over it.
4. Add bay leaves and cover.
5. Cook on low for 8 hours until tender.
6. Shred the beef and mix it back into the juices.
7. Serve warm in bowls, tacos, or wraps.
Notes
Use fewer chipotle peppers for a milder flavor.
Store leftovers with juices to keep meat moist.
Freeze for up to 3 months for easy meals.
