500 grams filtered water

15 grams fine sea salt


Instructions

1. Wash the carrots thoroughly and slice them into even sticks that fit your jar.

2. Smash the garlic cloves and place them at the bottom of a clean glass mason jar.

3. Pack the carrot sticks tightly into the jar on top of the garlic.

4. Weigh your water and mix in 3% sea salt until dissolved, then pour over the carrots.

5. Add a fermentation weight to keep everything submerged, seal loosely, and let sit for 5 to 10 days.
