A rich, sweet elderberry cordial recipe that yields a vibrant berry concentrate perfect for mixing into sodas, cocktails, and teas.
Ingredients
3 cups fresh elderberries, stemmed and washed
3 cups water
1 cinnamon stick
2 tbsp fresh lemon juice
2 cups granulated sugar
Instructions
1. Strip the fresh elderberries from their stems using a kitchen fork and rinse thoroughly.
2. Combine the berries, water, and cinnamon stick in a saucepan and bring to a boil.
3. Reduce heat and simmer for 20 minutes to safely cook down the fruit.
4. Strain the mixture through a fine-mesh strainer lined with cheesecloth into a bowl.
5. Press the berries firmly to extract all the rich juices.
6. Add the sugar and lemon juice to the warm liquid, stirring until completely dissolved.
7. Allow the cordial to cool, then pour into a sterilized glass bottle and store in the fridge.
Notes
Never consume raw elderberries. Ensure you simmer the fruit for the full 20 minutes to guarantee it is entirely safe to consume. Dilute your finished cordial with sparkling water or club soda.
