Description
This easy crockpot hawaiian chicken features tender shredded chicken breasts cooked low and slow with sweet pineapple chunks, barbecue sauce, fresh ginger, and brown sugar.
Ingredients
3 lbs boneless skinless chicken breasts
1 can pineapple chunks 20 oz with juice
1 cup sweet barbecue sauce
1/2 cup dark brown sugar packed
2 tbsp soy sauce
1 tbsp fresh ginger grated
3 cloves garlic minced
Instructions
1. Trim the fresh chicken breasts and arrange them flat in a single layer at the bottom of your crockpot.
2. Open the canned pineapple chunks and pour the sweet fruit pieces directly over the raw poultry layers.
3. In a separate small mixing bowl, whisk the barbecue sauce, brown sugar, soy sauce, grated ginger, garlic, and reserved pineapple juice.
4. Pour the completed tropical pour-over sauce evenly across the chicken and pineapple chunks inside the slow cooker.
5. Cover with the glass lid and cook on the Low heat setting for 6 hours until the poultry is fully tender.
6. Remove the cooked meat from the pot using tongs and shred it into juicy ribbons on a clean cutting board.
7. Return the shredded chicken to the warm pineapple syrup in the crockpot and stir well before serving over hot rice.
Notes
Never use frozen meat directly in your slow cooker due to food safety rules. If your sauce feels too thin at the end of cooking, stir in a quick cornstarch slurry during the last thirty minutes on high heat.
