Description

A comforting, rustic side dish featuring hard root vegetables like carrots, parsnips, celeriac, and beets, roasted until tender and finished with a thick, syrupy balsamic glaze.

3 large carrots, cut into 1-inch chunks

3 medium parsnips, cut into 1-inch chunks

1 small celeriac (celery root), peeled and cubed

2 large red beets, cut into 1-inch chunks

1/3 cup high-quality balsamic vinegar

1/4 cup extra virgin olive oil

2 tbsp honey or maple syrup

1 tbsp soy sauce

2 tsp fresh rosemary, finely chopped

Salt and black pepper to taste


Instructions

1. Preheat your oven to 400F and prep two large, heavy-duty metal baking sheets.

2. Wash all vegetables thoroughly and slice them into uniform, one-inch chunks, keeping beets separate.

3. Whisk the balsamic vinegar, olive oil, honey, soy sauce, rosemary, salt, and pepper in a small bowl until smooth.

4. Toss the carrots, parsnips, and celeriac in two-thirds of the dressing, then toss beets separately in the remaining dressing.

5. Arrange the vegetables in a flat, single layer on the sheets, keeping the beets on their own section to prevent staining.

6. Roast for 35 to 40 minutes, flipping gently halfway through, until the edges are caramelized and tender.

7. Pour any remaining dressing into a small saucepan and simmer over low heat for 5 minutes until a thick glaze forms.

8. Transfer the hot vegetables to a serving platter and drizzle the warm, thick balsamic glaze over the top before serving.

Notes

Always roast the beets slightly separated from the lighter root crops to avoid turning the entire dish bright pink. Transfer to the oven immediately after tossing to prevent sogginess.
